Easy Homemade Fresh Figs Jam:

HOW To Cook Fresh Figs Jam at home

Ingredient:

1/2 kg. fresh figs

200 g.sugar

1/2 cup of water

2 pinches of salt

3 pieces of cinnamon

2 tbsp of lemon juice

Zest of 1 orange or lemon

 Preparation:

1. To clean the figs it is good to remove the top and any traces of "buttermilk" (latex).

 Each fig is then cut into 4-6 parts. Do not remove the peel.

2. Put in a saucepan, add the sugar and water, and cook over low heat.

Bring to a boil add cinnamon, salt, lemon juice, and zest of orange.

3. Cook over low heat for another 20 minutes, stirring occasionally to prevent the sugar

 from settling on the bottom and the figs to fall apart.

4. The jam thickens in a short time due to the presence of the natural pectin of the figs.

5. To understand if the consistency is the right one, pour a teaspoon of jam on a saucer

 and let it cool: if it solidifies a bit, then the mixture will be ready to be put in the jars

 otherwise continue cooking.

6. Remove the Jam from the heat and put it into pots. Close with the respective screw

 caps and leave the jars to rest until the jam has reached room temperature. 

It is advisable not to turn the jars with hot jam to avoid compromising the 

gelatinization process.
7. The fig jam is ready to be stored in a cool and dry place.

Note: sterilize the glass jars with their respective screw caps by boiling them in water

  for at least 20 minutes.
