How To Cook Pineapple Pie "Ivory

How To Cook Pineapple Pie "Ivory

 Ingredients:

 200 g of almond paste,

 4 egg peaks, 

30 ml of milk,

 120 g of powdered sugar,

 60 g of flour,

 1 pinch of cinnamon,

 oil for the waffle iron,

 500 g fresh pineapple (Ivory Coast),

 400 ml of whipped cream,

 2 bags of Kremfix, sugar, 

1 liqueur glass of orange liqueur (e.g. cointreau),

 200 g fresh strawberries with calyx or 2 kiwis to 100 g, chopped pistachios.

 Preparation of a pineapple; here's how to do it.

 
  
 
1: The pineapple ground is heavy, ripe and juicy pressed with your thumb on a good quality. scum when you can easily tear off a leaf and the flesh of the pineapple gives way under the pressure of the finger then the pineapple is fine safe even if it is partially still green. 
  
 
2 Cut the peduncle first.
3; Cut the pineapple in half lengthwise to obtain 2 halves with rosettes. 
 
4 Cut the fruit into 4 quarters using a fairly long and strong knife. 
5 Cut the core and leave no fleshy part.

                  6: The pulp is easily removed with the knife and the breaking

 into small pieces is easy
 Preparation: 

1. Strain almond paste through cheesecloth and mix with egg whites and milk to obtain a smooth mixture.

 2. Sift powdered sugar and flour. Add to the above mixture, followed by the cinnamon. Bake thin waffles in oiled waffle iron: let cool on a wire rack.

 3. For filling, cut pineapple into sticks. Puree half of the pulp. Beat the whipping cream until stiff. Add the Kremfix and beat to obtain a firm whipped cream. Add sugar to taste.

 4. Add orange liqueur to the pineapple puree.

 5. Spread some of the purée on one waffle, spread pineapple sticks on it and place the second waffle on top. Continue in this manner.

 6. Spread a thin layer of pineapple whipped cream on the top waffle. Fill a pastry bag with the remaining whipped cream and top the waffle with a fluted tip. Place a stick of pineapple between each clump of whipped cream.

 7. Wash medium-sized strawberries, keeping the stems intact. Decorate the whipped cream clumps with the strawberries. You can replace the strawberries with kiwi slices.

 8. Decorate with chopped pistachios.
